Ingredients for Heston Blumenthal's Roasted Potatoes:

  • 2 lbs roasting potatoes (e.g., yukon gold)

  • 1/2 cup beef tallow, duck fat or olive oil

  • Salt to taste

  • Freshly ground black pepper

  • 4 cloves of garlic

  • Scallions to garnish

Ingredients for the Onion Dip:

  • 2 cups sour cream

  • 3 yellow onions sliced

  • Salt to taste

Instructions for Perfectly Roasted Potatoes:

  1. Preheat Oven: Start by preheating your oven to 400°F.

  2. Prepare Potatoes: Peel the potatoes and cut them into evenly sized chunks or wedges, around 2-inch pieces. Rinse them thoroughly under cold water to remove excess starch.

  3. Parboil Potatoes: Place the potato chunks in a pot of cold, salted water. Bring it to a gentle boil and parboil for about 8-10 minutes until the edges start to soften but remain firm. Drain the potatoes and let them sit in the colander for a few minutes to dry and cool slightly.

  4. Create Fluffy Edges: Once drained, return the potatoes to the pot. Place a lid on the pot and gently shake it to roughen up the edges of the potatoes. This step helps create those desired fluffy edges that get beautifully crispy in the oven.

  5. Coat with Fat: Heat the beef fat or olive oil in a roasting tray in the preheated oven for a few minutes until hot. Carefully add the potatoes to the hot fat in the tray, ensuring they are well coated. Season generously with salt and freshly ground black pepper.

  6. Roast to Perfection: Place the tray in the oven and roast the potatoes for approximately 50-60 minutes, turning them occasionally to ensure even browning. If desired, add garlic during the last 20 minutes for added flavor.

  7. Serve & Enjoy: Transfer the roasted potatoes to a serving dish. Garnish with additional salt if needed and serve immediately as a delightful accompaniment to your meal.


Instructions for 2-ingredient Onion Dip:

  1. Sauté the onions: Heat large non-stick skillet over medium heat. Add olive oil and sliced onions. Season with salt and lower the heat to medium low. Continue to sauté until onions are soft and deep brown, about 30 minutes. Allow to cool

  2. Mixing the dip: Combine 2 cups of sour cream with the cooled onions. Season with salt and refrigerate for 3 hours for the flavors to meld.

  3. Serve & Enjoy: Transfer to a serving dish, garnish with scallions and enjoy.
