Easy Potato Dish for Thanksgiving (Pommes Anna)

Pommes Anna are one of my FAVORITE potato recipes for the holidays, and you will be amazed by how simple and easy it is to make. The result is a show-stopping gorgeous potato dish that is crispy on the outside, while soft and pillowy on the inside. This recipe is great for a crowd, and is great recipe to hand off to a family member who wants to help in the kitchen.

Ingredients:

Step 1: Slicing the potatoes

Using your mandolin, slice the potatoes into 1/8 inch thick disks. While some mandolins can be intimidating, this one is not - use the provided hand guard and you will have paper thin, uniform potato slices in no time.

Step 2: Arranging the potatoes

pour half of the clarified butter in the 15 inch cast iron pan, and place in a 425 degree oven for 5 minutes to melt. Remove from the oven and arrange the potatoes, overlapping (leaving about a 1/4 inch gap) in a circle. Once you have completed the first circle, repeat with the next rotation, until you fill the pan. Brush on the remaining clarified butter, and maldon salt. Place in the oven for 30 minutes, uncovered.

Step 3: Plating

Place a circular dish (at least 16 inches in diameter) over the top of the cast iron. Carefully invert the pan, flipping the potatoes out onto the serving dish. This can also be served straight from the cast iron pan. Top with more Maldon flaky salt. Enjoy!
