Crispy Skin Salmon with Scallion Sauce
Ingredients:
1LBS Salmon fillet, skin-on
Diamon Crystal Kosher Salt
2 tablespoons olive oil
4-5 scallions, finely chopped
3 cloves garlic, minced
1 tablespoon whole grain mustard
1 tablespoon red wine vinegar
1 tablespoon honey
1 teaspoon sesame oil

Instructions:
Prep the Salmon: Pat dry the salmon fillets with paper towels. Season both sides generously with salt.
Crisp the Skin: Heat a large stainless steel skillet over medium-high heat. Add 1 tablespoon of olive oil. Once the oil is hot, carefully place the salmon fillets in the skillet, skin side down. Press gently with a spatula to ensure good contact with the pan. Cook for about 6 minutes until the skin becomes crispy and golden brown. Avoid moving the fillets too much to retain crispiness. Flip the salmon and cook for an additional 3-4 minutes on the other side or until the salmon is cooked to your preferred doneness. Remove from heat and set aside.
Prepare the Scallion Sauce: In a bowl, mix the chopped scallions, olive oil vinegar, honey, sesame oil, and mustard. Salt to taste
Serve: Place the crispy skin salmon fillets on a serving plate (skin side up). Using a spoon, crack the crispy skin to reveal the flesh below. Spoon the scallion sauce generously over the salmon, making sure to get into the cracks you just created. Top with flaky salt
